Konzept für McDonalds-Site Vorweg: Lebensmittelchemische Zusatzstoffe, die in Produkten von McDonald's anzutreffen sind, finden sich ebenso auch in herkömmlichen Supermarktprodukten, die jeder private Verbraucher dort kaufen kann.

  • Das Problem ist aber: McDonald's ist d a s größte unter den Gastronomieunternehmen in Deutschland. Damit gibt es die Richtschnur für andere Unternehmen in der Branche vor. Erfolgreiche Muster werden zumeist später von anderen nachgeahmt. Ob diese für den Verbraucher schädlich sind oder nicht steht auf einem anderen Blatt. Nur die Behauptung, McDonald's könne problemlos ein Teil einer ausgewogenen Ernährung sein, erscheint jedoch eher als Teil einer Marketingstrategie, die sich aktuellen Trends hingibt: McDonald's gibt "realistische Ernährungsvorschläge für jeden Tag, die zeigen sollen, wie McDonald's zu einer ausgewogenen Ernährung und Lebensweise beitragen kann."     1. Das Unternehmen Daten - Fakten: Schwarzbuch McDonald's in Deutschland McDonald's ist nach wie vor der unangefochtene Marktführer der Gastronomiebranche. McDonald's gründete in Deutschland vor 32 Jahren seine erste Filiale. Trotz der angespannten konjunkturellen Lage steigerte McDonald's mit 2,27 Milliarden Euro seinen Nettoumsatz im Jahr 2003 (vgl. McDonald's Jahresbericht 2003).

In Deutschland liegen keinerlei brauchbare, unabhängig veröffentliche Daten zu den faktisch in McDonald's Produkten verwendeten Zusatzstoffen vor. Der Verbraucher ist auf die Angaben des Herstellers verwiesen. In den USA gibt es seitens präzise Daten zu den Inhaltsstoffen der angebotenen Produkte von McDonald's. Die US-Angaben ist jedoch nicht ohne selbstständige Analysen in Deutschland übertragbar. McDonald's Europa 5.200 Filialen in Europa beziehen ihr Rindfleisch von europäischen Rindern Vorderviertel ausgedienter Milchkühe werden zu Hamburgern verarbeitet; für US-Amerikaner wäre dies "Hundefutter", da sie nur eigens zur Fleischproduktion gezüchtete Rinder verzehren.

In der EU wird rund ein Drittel der Futtermittel für die Tierhaltung importiert. Davon stammen 50 Prozent aus Ländern der sog. Dritten Welt. Dort werden dazu in der Regel die besten landwirtschaftlichen Flächen hergegeben und so der lokalen Nahrungsmittelproduktion entzogen. (vgl. Schwarzbuch Markenfirmen, 158).

In Südamerika werden große Flächen des Regenwalds zerstört und zur Rindfleischproduktion genutzt. Die einheimischen Bewohner werden dazu vertrieben (vgl. Schwarzbuch Markenfirmen, 158).

  • Unter dem Druck von Kritikern an Fast-Food-Ernährung und ihren möglichen Folgen passte sich McDonald's dem gegenwärtigen Trend zur sog. "bewußten Ernährung" an und erweiterte seine Produktpalette um neue Salate, Milchshakes und Apfelsaftschorle. * Hinter dem Gesundheitsimage steht, das Motiv des "Essens mit schlechtem Gewissen".

Zutat und Nichtzutat - in der deutschen Lebensmittelkennzeichnungsverordnung (LKMV) Unterschieden wird zwischen Zutat und Nichtzutat, nach der "Logik: Zutaten, die keine sind, brauchen auch nicht auf der Zutatenliste zu erscheinen" (ebd., 123). Dort gilt der - lebensmitteltechnische - Grundsatz, "daß nicht der verwendete Stoff darüber entscheidet, was eine Zutat und was eine Nichtzutat ist, sondern seine jeweilige Funktion im Endprodukt" (ebd., 123).

Nichtzutaten sind Substanzen, die die Maschinengängigkeit der Rezeptur gewährleisten sollen. Sie müssen nicht erwähnt werden, wenn sie im fertigen Produkt keine technologische Funktion mehr erfüllen (ebd., 123f.): Emulgatoren, um Teig im Hochgeschwindigkeitsmixer zu fahren Cystein (gewonnen aus asiatischem Menschenhaar) zur Regulation der Festigkeit des Teiges (ebd., 123) Dimethyldicarbonat, das in Limonaden und anderen Getränken in PET-Flaschen als "Kaltenkeimungsmittel" verwendet wird. Es wirkt, indem es sich schnell zersetzt und ist deshalb deklarationsfrei. Konservierungsmittel für Fruchtzubereitung in Joghurts wird zu Nichtzutat, da nicht der einzelne Joghurt damit vor Verderb geschützt wird. Die Zusammensetzung der Fruchtzubereitung selbst besteht aus Zutaten.

Macht die Zutatenkombination weniger als 25 Prozent des Endproduktes aus, besteht keine Pflicht zur Deklaration. "Der Verzicht auf die Deklaration der Zutaten von Zutaten führt zu der absurden Situation, daß um so weniger auf der Zutatenliste steht, aus je mehr Komponenten ein Produkt zusammengesetzt ist." (ebd., 124)

Nach dem Lebensmittelrecht (LMKV §5, Abs. 2, Ziffer 2) müssen all die Stoffe nicht aufgeführt werden, die die maschinelle Verarbeitung erleichtern. (ebd. 61) Dazu Beispiele für Helfer aus der Backstube: " Mixturen, die Teige maschinenfreundlich und voluminös machen; Schimmelpilzenzyme, die Stärke abbauen oder den Teig erweichen; Phosphate, die die Porengröße steuern; Lipoxygenasen, die Toastbrot weiß erstrahlen lassen; * Färbemittel, die hellen Mehlen den Vollkorn-Look verpassen ..." (ebd. 60)
